Apple Cinnamon Whoopie Pie Recipe
makes about 16-18 cookies (enough for 8-9 pies)
1/2 cup room temp. unsalted butter
1 cup brown sugar
1egg
1 medium mashed apple
1/2 tsp. baking soda
1tsp. baking powder
2 1/2 tsp. cinnamon
1/2 tsp. salt
2 cups All Purpose Flour
Preheat oven to 350
With this recipe you can you use any apple of your choice I chose a sweet, tart apple.
The apple also does not need to be completely mashed chunks ARE okay.
You have a few option when placing the batter on the baking sheet you can pipe it on with a large round tip (which I prefer), Small ice cream scoop, or a whoopie pie pan.
Place each pie about 2 inches apart.
Bake for 15 minutes until they are springy to the touch.
If your oven tends to cook uneven like mien I recommend switching the pans around so they all bake evenly.Cool on a wire rack.
Cinnamon Buttercream Filling (one used in picture)
1/2 cup room temp unsalted butter
2tsp. cinnamon
3 cup sifted powdered sugar
2 Tbsp. milk
2tsp. butter flavoring
Cream butter in mixer until smooth and fluffy.
Slowly add powdered sugar and cinnamon.
Beat until combined.
Add butter flavoring and milk.
Mix on low until combined, then beat on medium-high for 1 min, scraping down the sides making sure all ingredients are well mixed.
Cinnamon Cream Cheese Filling
1/2 stick softened unsalted butter
4 ounces cream cheese
1 cup powdered sugar
1 tsp. salt
1/2 tsp. vanilla extract
1 1/2 tsp. Cinnamon
Cream unsalted butter and cream cheese on low till they are completely combined.
Add powdered sugar, salt and vanilla continue to mix for about a minute or two then hike up the speed of your mixer to medium-high and continue to mix until the filling is nice and fluffy about 2 minutes.
When adding the filling to pie you can either use a fancy piping tip or just spread it on the pie. For this one I just spread it on and it still looked as good as it tasted. However if you want them to look a little more fancy you can pipe it on I love using the medium closed star tip.
